Arugula Summer Salad
This salad is perfectly light for those hot summer months. Although, with such a simple recipe, you'll want to make it year-round!

Makes 6 servings

INGREDIENTS:

cups fresh arugula or baby spinach
1
large sweet onion, thinly sliced

medium tomatoes, cut into wedges
INGREDIENTS for DRESSING:

Tbsp olive oil
1
Tbsp lemon juice
1  
Tbsp red wine vinegar
  Salt and Pepper to taste

DIRECTIONS:
1. 
In a salad bowl, combine the arugula, onion, and tomatoes. Whisk the dressing
 
ingredients; drizzle over salad and gently toss to coat. Serve immediately.
