Bette's Red Potato Salad

This red potato salad is so tasty, you'll have to try
it for yourself and savor all the goodness packed
inside!

Makes 12 to 14 servings

INGREDIENTS:
4 lbs red potatoes, cubed but not peeled
small onion, diced
6 stalks celery, diced
1 hard-boiled egg, peeled and sliced
1 cup mayonnaise, or more to taste
tbsp chopped fresh parsley
Salt and freshly ground pepper to taste
to 2 tbsp oil 
1   to 2 tbsp vinegar

DIRECTIONS:

1. In a large pot put in water to cover potato cuves. Boil the potatoes until fork-tender.
Drain and refrigerate in a large bowl until cool.
2. When potatoes are cool, add the onion, celery, and eggs. Gently mix in the mayonnaise,
parsley, salt, pepper, oil, and vinegar. Taste and add additional spices to your liking.
